Controls equipment, such as mixing kettles, pumps, pressure
cooker, and homogenizer to make chocolate and other flavored
syrups, according to formula: Weighs and dumps ingredients, such
as cocoa powder, milk solids, and sugar into mixing kettle.
Admits metered amounts of invert sugar syrup, wohle milk, cocoa
butter, and chocolate. Starts agitators to mix batch for
specified time and pumps mixture into pressure cooker.
Obserevs
gauges and thermometer and adjusts steam valves to control
pressure cooker. Examines batch to detect lumps, and pumps
mixture through homogenizer to ensure uniform consistency.
Collects smaple for laboratory analysis.
